Equipment

  • Large Mixing Bowl Microwave Safe

Ingredients
  

  • 6 cups Rice Chex Mix
  • 1/4 cup butter
  • 1/3 cup graduated sugar
  • 1 1/2 teaspoons water
  • 2 teaspoons vanilla
  • 1/4 cup powdered sugar
  • 1 oz white baking chocolate
  • 1 tsp edible sugar or colored sprinkles

Instructions
 

  • In a large microwaveable bowl, measure 6 cups cereal. Set aside.
  • Line a cookie sheet with wax paper or foil.
  • Melt butter in a sauce pan (or microwave uncovered on High for 30 seconds until melted), add sugar and water. Stir until smooth. Add vanilla and stir.
  • Pour the butter mixture over cereal. Stir until evenly coated.
  • Microwave the cereal mixture uncovered for 4 minutes, stirring every minute, until glazed. (Make sure to stir or pieces will overcook!)
  • Carefully (the bowl will be hot!) spread on a cookie sheet.
  • Melt bakers chocolate. Drizzle on cereal. Add sprinkles! Let cool before serving.

Notes

Allergy-friendly Substitutions & Considerations: 
  • ALWAYS read food labels carefully. 
  • Use a dairy free alternative for the butter, like coconut oil.
